Today we started our day with a delicious breakfast consisting of hot coffee, Cinnamon Raisin Bagels with butter, and a delicious Breakfast Casserole.

The casserole is so easy to make. Simply layer the ingredients in a pan. Bake. Enjoy!
This recipe was an inspiration from Chef Dan (someone I know).
The ingredient measurements are changeable. You can add more or less of some items.

Happy Father's Day ~ Enjoy a Breakfast by sometimes SAVORY (1)

Butter, softened (to grease pan)
Butter (to saute onions)
Olive oil (to saute onions)
1 large Onion, diced in small cubes
5-7 Potatoes, diced and cooked (or buy Hash Browns)
Grated cheese (about ¼ cup)
Creamed Spinach (use 1 box frozen spinach and some heavy cream, approx ¼ or so, and a pat of butter and some olive oil)
1 egg, jumbo size
Tomatoes, sliced thin (9 slices)
Garlic powder, salt, pepper, dried oregano – seasonings

Preheat oven to 350 degrees Fahrenheit.

Lightly grease 8×8 pan with softened butter. Set aside.

Cook potatoes: Cut potatoes in cubes and cook in salted water. Drain. Set aside. (or use store bought Hash Browns).
Frozen spinach: Thaw spinach, drain. Set aside.
Grate cheese. Set aside.
Slice tomatoes. Set aside.
Dice onions. Set aside.
To one jumbo egg, add salt and pepper. Mix. Set aside.

ONIONS/POTATOES: Add a tablespoon or so of butter and olive oil to hot pan.
Add diced onions. Saute until golden.
Add cooked, diced potatoes (or hash browns).
Saute cooked potatoes and onions until golden, about 10 minutes.
SPINACH: In another pan, add small amount olive oil and butter.
Add spinach to pan.
Add seasonings: garlic, salt and pepper. Mix.
Add heavy cream. Use just enough for a creamy consistency. Mix.

1- Butter the pan.
2- Add the potatoes in an even layer.
3- Add the grated cheese evenly.
4- Add the creamed spinach evenly.
5- Beat egg lightly and pour it over the spinach.
6- Arrange 9 tomato slices over the spinach.
7- Season tomatoes with garlic powder, salt, pepper and dried oregano.
8- Bake at 350 degrees F. for 30 min or until set.
9- SERVING SUGGESTION: Cut a slice. Place in hot buttered pan to crisp the potatoes on the bottom.
