Eggs are great for breakfast, lunch or dinner. Eggs also make great snacks and appetizers.
Who thought of putting eggs in a Burrito?
Well, it may not be a new concept, but it was a new experience for me. You see, I am somewhat traditional when it comes to how I like to enjoy my eggs. So, putting eggs in a burrito sounded like a weird idea. I gave it a try, and loved it!
Now, I’m considering different ways to enjoy eggs. Stay tuned for future recipe posts using the incredible, edible egg!
Ok, let’s make this Breakfast Burrito.
First things first. I start by brewing coffee…taking sips of coffee while cooking breakfast.
Remember, this is a loose reciipe. You can add more or less of the ingredients.

Adapted by Carmen Ortiz of sometimes SAVORY
1 tablespoon butter
1 small onion, diced
½ red pepper, diced
red pepper flakes
1 teaspoon olive oil
Splash of milk
Cooked meat of choice, [bacon, prosciutto, ham, etc]
¼ cup monterey jack cheese, grated
COOK VEGGIES: In a warm skillet, add butter. Allow to melt.
Add diced onion, diced red pepper, salt, pepper, garlic powder, red pepper flakes and olive oil.
Saute veggies for about 10 minutes on medium low heat.
Remove veggies from pan into a small bowl. Set aside.
PREPARE EGGS: In small bowl add eggs.
Pour a splash of milk in eggs.
Add salt and pepper.
Wisk with fork.
Turn the flame on medium low. Heat pan.
Add butter to skillet. Allow to melt. [note: use same pan you sauteed the veggies.]
Pour eggs in pan. Remember to keep the at low. Low and slow is the name of the game for perfect eggs.
Using a wooden spoon, start from the outer edge of pan, stiring gently.
When eggs are one, add a pat of butter to pan to coat eggs with butter. [optional]
Remove eggs from pan.
PREPARE THE BURRITO: Place flour tortilla on plate.
Place grated cheese on tortilla.
Add meat choice.
